spicy chili releno eggs

Servings: 6 / Time: 15 minutes

INGREDIENTS:

  • 2 tsp olive oil
  • 1 small can, diced green chilies
  • 1/2 tsp salt (can be omitted)
  • 4 eggs, separated
  • 1 cup pepper jack cheese, grated (or low-fat shredded mozzarella cheese)
  • Black pepper to taste

DIRECTIONS:

  1. Preheat broiler. Pour olive oil into a 10-inch ovenproof frying pan over medium-high heat.
  2. Separate the egg whites and yolks. Beat the egg whites until you get soft peaks then fold the yolks back into the whites.
  3. Pour eggs into the pan then add the chilies over the top and cook until almost set but still runny on top, about 2 minutes.
  4. Sprinkle cheese over eggs and broil until cheese is melted and browned, 3 to 4 minutes.
  5. Slide frittata onto a serving platter and cut into wedges.
